S.A.Z.A. - Concentrators Room

Another picture of the well conserved interior of S.A.Z.A. sugar mill.
The Concentrators Room is filled with a battery of 25 concentrators, better known as huge multiple-evaporation boilers. In this process all the water goes away and the rest is called "sugo denso" (dense soup), with an amount of sucrose around 63%. This process is followed by a second cooking into steam-boilers and then a centrifugation, after that we have the brown raw sugar.
